Compared to sugar, far less energy is used to deliver the sweetness of honey to your table. Tremendous quantities of fossil fuels are spared by not drying and transporting raw sugar from the tropics and then refining or liquefying it.

Most Ontario honey comes from the wildflowers and trees that grow in the woods and pastoral fields. Farmland is not cropped as is done to produce corn (glucose/ fructose) sweeteners.
